About a year ago I saw several posts about a chocolate microwave cake. I have such a sweet tooth, of course I had to try it !
Well I'll tell you this: it wasn't good, not good at all :(
It wasn't even worth the few minutes of effort to make it !
So I was intrigued when I found this recipe last Autumn. While waiting for a doctor's appointment, I was reading some gossips and women magazines (as one does !) and I came across this recipe for a "Microwave Chocolate Pudding... That works" in Good Housekeeping (Oct 2011). That caught my attention.
I finally tried the recipe this week and although it's not (in my opinion) as good as an oven baked cake, it is pretty good! Definitely a good enough fix for a chocolate craving.
It is in fact quite close to the microwavable chocolate sponge puddings you can buy in any supermarket in the UK.
Also, since Father's Day is next week, it is a simple enough recipe for kids. Why not get your children "bake" a cake on their own for Daddy's special day ??!!!
Microwave Chocolate Pudding... That Works

Serves 2
Ingredients
2 1/2 tbsp cocoa powder
2 tbsp Golden Syrup (it is available in some stores in the US. I find it at Safeway or at World Market)
6 tbsp self-raising flour
2 1/2 tbsp caster sugar
1 medium egg
1 1/2 tbsp oil
1 1/2 tbsp milk
40g white chocolate, finely chopped
Divide 1 tbsp cocoa powder equally between 2 mugs.
Add 1 tbsp golden syrup to each and mix to a paste.
Mix flour, caster sugar and remaining 1 1/2 tbsp cocoa powder into a bowl.
Crack in the egg and add the oil and milk. Mix well then stir in the white chocolate.
Divide mixture equally between the 2 mugs.
Microwave on full power (800 W) for 1 minute 10 sec
Serve in the mug or turn onto a plate.
And for a real treat, add cream or ice cream !!!
