I first saw these decorations in my book Cupcakes and Fairy Cakes by the Australian Women Weekly. They have been on my “to try” list for a long time and I am glad to have finally found the occasion to make them. Don’t they just make the perfect decorations for my Panna Coladas ???
They really are quite simple to make, here is a quick how to:
You will need
A pineapple
A sharp knife
Several empty egg boxes
Pre-heat your oven to 100 deg C (fan forced)
Take the pineapple and peel it.
Using a sharp knife, cut the thinnest slices you can manage (you may use a mandoline if you have one).
Place the slices on a wire rack.
Make a sugar sirup by bringing to the boil 1 table spoon of caster sugar with 1 table spoon of water.
Using a pastry brush, brush each side of the pineapple slices with the sirup.
Dry in the oven for about an hour or until golden on the edges.
Immediatly remove the slices and place on the “towers” of an egg box to cool. They will harden while cooling and keep their shape.
You now have lovely pineapple flowers.
