These chocolate puddings are deliciously creamy and because they can be made the day before, they are the perfect party food.
They are really quick to make and little ones love them.
Chocolate pudding
Will make approximately 6 ramequins
250 ml milk
250 ml double cream
3 egg yolks
60g caster sugar
150g good quality dark chocolate, chopped finely
1 sheet gelatine (sizes vary a lot depending on brands, mine was 7cm x 15 cm)
Place the gelatine sheet in a bowl of cold water and leave for at least 10 minutes.
Pour milk and cream in a pan and gently bring to the boil.
Beat egg yolk and sugar in a bowl until the colour changes to a pale yellow. Add the hot milk and cream, mix well and return to the pan. Gently heat until the mixture thickens.
Place chopped chocolate in a bowl and pour in half of the hot cream. Mix until all the chocolate has melted.
Add the gelatine sheet (squeeze well before adding to remove excess water) and mix well.
Add remaining cream.
Pour into the ramequins. Leave to cool and then place in fridge for at least 2 hours.
